Budget Recipes for Large Families: Bourbon Rice & Broccoli
Don’t let the name fool you, this stuff is absolutely amazing. You see, this was born was a few people in my family absolutely hate white rice. I on the other hand could live on it. I decided to make bourbon chicken one night and I followed a recipe, it was fair at least, from there I decided I would make my own, I mean I knew by idea what was in it.
My oldest child, was aghast at the idea of no meat, he asked me what I was making and I told him, he promptly responded with “Do you need help making the chicken” I just laughed and told him to trust me. Once served I heard the normal, this smells really good. You would have thought I put some foreign matter in front of them and they where unsure. I mean seriously, they have had the bourbon “sauce’ before, on rice and broccoli for that matter, but that big chunk of chicken was missing. I have been trying to teach the kids, you don’t need to have meat every meal. Plus, I have issues eating meat every day. I will take a bite and it just make me sick and I don’t want it. So all I end up eating are the side dishes.
So in the end, my family raved about this and told me I could make it anytime I want, but my son still would like meat.. lol.. Boys!
