Budget Recipes for Large Families:  Bourbon Rice & Broccoli

Don’t let the name fool you, this stuff is absolutely amazing. You see,  this was born was a few people in my family absolutely hate white rice. I on the other hand could live on it. I decided to make bourbon chicken one night and I followed a recipe, it was fair at least, from there I decided I would make my own, I mean I knew by idea what was in it. 

My oldest child, was aghast at the idea of no meat, he asked me what I was making and I told him, he promptly responded with “Do you need help making the chicken” I just laughed and told him to trust me. Once served I heard the normal, this smells really good. You would have thought I put some foreign matter in front of them and they where unsure. I mean seriously, they have had the bourbon “sauce’ before, on rice and broccoli for that matter, but that big chunk of chicken was missing. I have been trying to teach the kids, you don’t need to have meat every meal. Plus, I have issues eating meat every day. I will take a bite and it just make me sick and I don’t want it.  So all I end up eating are the side dishes. 

So in the end, my family raved about this and told me I could make it anytime I want, but my son still would like meat.. lol.. Boys!

Bourbon Rice & Broccoli
Serves 6

Ingredients
10 cups rice
1 cup low sodium soy sauce
1/4 cup packed brown sugar
1/4 tsp white vinegar
2 heaping tbl. minced garlic
2 tbl. of bourbon
1 small onion diced
1/4 cup small sliced pepper
2 bunches of broccoli
Instructions
1. Prepare rice as directed on package.
2. Steam broccoli
3. In small sauce pan combine, soy sauce, vinegar, bourbon, brown sugar, onion, pepper, and garlic. Heat over medium/low heat until brown sugar is completely dissolved. Once dissolved set heat to low, cook an additional 5-10 minutes.
4. Combine all ingredients together, stir gently but ensure all rice is coated.
Notes
The small airline bottles of bourbon will last a while, or buy your bourbon on sale. It can be any brand any quality.
This is a very filling meal we noticed stayed with us longer. Everyone bypassed there nightly "healthy" snack.
